Rock Vet Clinic expands South Highway 75 location

Bluestem restaurant owners buy Minn-I-Kota building for catering business

Rock Veterinary Clinic has sold its Minn-I-Kota building on East Main Street and plans to expand at its South Highway 75 location.
On Sept. 28 clinic officials will close the Minn-I-Kota Veterinary Clinic purchased in June 2015 from Dr. Marlen Van Otterloo.
Minn-I-Kota focused on pet care, grooming and boarding.
“We tried to make a good go of it at the Minn-I-Kota location,” said veterinarian Dr. Erin deKoning. “We greatly appreciated all the business and support we received.”
However, more pet owners have chosen to bring their animals to the clinic’s South Highway 75 location, and this prompted clinic officials to build a separate facility there, deKoning said.
Construction will begin this fall and the new space will open after the first of the year.
The 60-by-70-foot facility will house a new grooming and boarding facility and a larger warehouse for the clinic’s retail livestock and equine bagged feed.
Until construction is finished early next year, the clinics’ two groomers — Eve Hoffenkamp and Alyssa DeWeerd — will work together at the South Hwy. 75 location after Sept. 28.
Skyler Hoiland, owner of The Bluestem restaurant in Luverne, is purchasing the Minn-I-Kota Clinic building.
“We are going to try and make a nice catering kitchen for us,” he said.
With an expanding catering business, Hoiland said space in the restaurant’s kitchen becomes limited, especially on Fridays and Saturdays when the restaurant is busier.
Remodeling of the Minn-I-Kota building is planned for later this year with the kitchen operational after the first of the year.
